Fluffy French Toast

Who doesnt love French Toast???? There are so many recipes out there, so I thought Id share mine. The kids love it and you can top it off with powder sugar ( which my kids do) and your fav fruit (my kids love strawberries).

Ingredients:
1/4 cup all-purpose flour
1 cup milk
1 pinch salt
3 eggs
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 tablespoon white sugar
12 thick slices bread

Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
Heat a lightly oiled griddle or frying pan over medium heat.
Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

Sausage and Egg Casserole

This is a great dish for a Sunday morning breakfast with the family. Just prepare the night before!!!

Ingredients:
6-8 bread slices
sausage (mild or hot depending on taste)
8 eggs beaten
2 C. milk
1 teaspoon salt
tomatoes cut up in small pieces (optional)
green pepper cut into small pieces (optional)

 Cook sausage and drain. Cut bread in half slices and place in baking pan. Sprinkle cooked sausage, cheese, tomatoes and green peppers. Mix eggs, milk and salt. Pour over rest of ingredients in pan. You can top with cheese. Cover and chill overnight. Make sure this sits out at least 15 mins before cooking. Bake at 325-350 degrees for 30-45 mins. This recipe is based on a 9x13 baking pan.

Sloppy Joe Stuffed Potatoes

Ingredients:
Large baking potatoes depending on your family size
1 can sloppy joe mix of your choice
hamburger meat
cheese
green onion optional
sourcream optional

Cook hamburger meat and drain fat. Add sloppy joe mix as usually and add the onions if you choose. Cook potatoes done. Cut potato as usual in the middle but not all the way through. I clean out the potato a little in the middle just to look neater. Put sloppy joe mix in the potato and add cheese and top with sour cream!!! This is really good and the kids love it!!!



                                               

Crunchy Potato Bites

Ingredients:
2 C. Very stiff cooked mashed potatoes
2 C. Finely chopped ham (optional)
1/3 C. Mayo
1 tsp. mustard
salt to taste
3 1/2 C. cornflakes

 Combine all ingredients except cornflakes. Chill for 30-45 mins. Shape chilled mixture into balls and then roll in crushed cornflakes. Place on well greased baking sheet. bake at 350 degrees for 20-25 mins until crispy.

Crunchy No Fry Chicken

This is really good, expecially for those who are trying to watch the grease!!!

Ingredients:
Chic Breast, legs, or thighs
1/4 Cup Chicken Broth ( I use Swanson)
3/4 C Finely crushed Corn flakes
salt and pepper to taste

Pour broth into bowl. stir in corn flakes, salt and pepper, Dip Chic into mixture. Bake in oven at 400 degrees and the time depends on what part of the chicken you have. I use the thicker breast and legs so it generally takes mine around 35 mins to cook.

                    

Pecan Chocolate Bars

Ingredients:
18 Keebler Sandies pecan cookies crumbled
2 Tablespoons all purpose flour
1/4 cups butter or margarine melted
2 eggs slightly beaten
1/2 C. firmly packed brown sugar
1/2 C. light corn syrup
1 Teaspoon vanilla
1 cup broken pecans
1/2 C. semi sweet Chocolates

In small bowl stir cookie crumbs, flour, and 2 tablespoons of melted butter. Press into bottom of UNgreased baking pan. Bake at 350 degrees for 10 mins.  For filling, stir eggs, brown sugar, corn syrup, vanilla, and remaining butter. Stir in semi sweet chocs and pecans. Spread over hot crust. Bake at 350 degrees for 20 -25 mins. Cool.

CUPPLE

This is very fun and cute for the kids to do.

Take 1 large apple and cut the top off. Hollow the inside with a knife and shape with a spoon. My kids like cut up small apple pieces and put them inside the apple and pour caramel over it. Also they like to put apple juice in it and use cinnamon sticks with it. This is a very fun to do!!!!




                         



                                 

RANCH CHICKEN TENDERS WITH CHEESY FRIES

INGREDIENTS:
½ ounce package cornbread muffin mix
1 ounce package ranch salad dressing mix
½ teaspoon salt
1 cup milk
Pack chicken tenders

2 Tablespoons cooking oil
1 package frozen French fries
1 cup shredded cheddar cheese


Directions:

1. Place frozen French fries in oven according to package directions.

2. Combine cornbread mix, salad dressing mix and salt in a large plastic zip block bag; set aside.

3. Pour milk into a shallow bowl. Dip chicken into milk; place in cornbread mixture and shake to coat.

4. Heat oil in a large skillet over medium heat.

5. Add chicken, cook until golden on both sides, about 6 to 7 minutes per side or until juices run clear.

6. Five minutes before French fries are done, sprinkle with cheddar cheese. Continue baking until cheese is melted.

Home Made Peach Ice Cream

This is an all time favorite recipe in my family expecially on hot summer days!!!

ingredients:
4 eggs
2 cans eagle brand milk
1 T. Vanilla flavoring
2 C. real peaches chopped to size (I cut mine in quarter sizes)
1 1/2 qts milk
Ice cream salt
Ice

Mix all ingredients together. Put into electric ice cream maker. Mine usually takes about 30-45 mins to make.
