Fluffy French Toast
Who doesnt love French Toast???? There are so many recipes out there, so I thought Id share mine. The kids love it and you can top it off with powder sugar ( which my kids do) and your fav fruit (my kids love strawberries).
Ingredients:
Ingredients:
1/4 cup all-purpose flour
1 cup milk
1 pinch salt
3 eggs
1/2 teaspoon ground cinnamon
1 tablespoon white sugar
12 thick slices bread
Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
Heat a lightly oiled griddle or frying pan over medium heat.
Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

Sausage and Egg Casserole
This is a great dish for a Sunday morning breakfast with the family. Just prepare the night before!!!
Ingredients:
6-8 bread slices
sausage (mild or hot depending on taste)
8 eggs beaten
2 C. milk
1 teaspoon salt
tomatoes cut up in small pieces (optional)
green pepper cut into small pieces (optional)
Cook sausage and drain. Cut bread in half slices and place in baking pan. Sprinkle cooked sausage, cheese, tomatoes and green peppers. Mix eggs, milk and salt. Pour over rest of ingredients in pan. You can top with cheese. Cover and chill overnight. Make sure this sits out at least 15 mins before cooking. Bake at 325-350 degrees for 30-45 mins. This recipe is based on a 9x13 baking pan.

Sloppy Joe Stuffed Potatoes
Ingredients:
Large baking potatoes depending on your family size
1 can sloppy joe mix of your choice
hamburger meat
cheese
green onion optional
sourcream optional
Cook hamburger meat and drain fat. Add sloppy joe mix as usually and add the onions if you choose. Cook potatoes done. Cut potato as usual in the middle but not all the way through. I clean out the potato a little in the middle just to look neater. Put sloppy joe mix in the potato and add cheese and top with sour cream!!! This is really good and the kids love it!!!

2 C. Finely chopped ham (optional)
1/3 C. Mayo
1 tsp. mustard
salt to taste
3 1/2 C. cornflakes
Combine all ingredients except cornflakes. Chill for 30-45 mins. Shape chilled mixture into balls and then roll in crushed cornflakes. Place on well greased baking sheet. bake at 350 degrees for 20-25 mins until crispy.

Crunchy No Fry Chicken
This is really good, expecially for those who are trying to watch the grease!!!
Ingredients:
Chic Breast, legs, or thighs
1/4 Cup Chicken Broth ( I use Swanson)
3/4 C Finely crushed Corn flakes
salt and pepper to taste
Pour broth into bowl. stir in corn flakes, salt and pepper, Dip Chic into mixture. Bake in oven at 400 degrees and the time depends on what part of the chicken you have. I use the thicker breast and legs so it generally takes mine around 35 mins to cook.

2 Tablespoons all purpose flour
1/4 cups butter or margarine melted
2 eggs slightly beaten
1/2 C. firmly packed brown sugar
1/2 C. light corn syrup
1 Teaspoon vanilla
1 cup broken pecans
1/2 C. semi sweet Chocolates
In small bowl stir cookie crumbs, flour, and 2 tablespoons of melted butter. Press into bottom of UNgreased baking pan. Bake at 350 degrees for 10 mins. For filling, stir eggs, brown sugar, corn syrup, vanilla, and remaining butter. Stir in semi sweet chocs and pecans. Spread over hot crust. Bake at 350 degrees for 20 -25 mins. Cool.

CUPPLE
This is very fun and cute for the kids to do.
Take 1 large apple and cut the top off. Hollow the inside with a knife and shape with a spoon. My kids like cut up small apple pieces and put them inside the apple and pour caramel over it. Also they like to put apple juice in it and use cinnamon sticks with it. This is a very fun to do!!!!

RANCH CHICKEN TENDERS WITH CHEESY FRIES
INGREDIENTS:
½ ounce package cornbread muffin mix
1 ounce package ranch salad dressing mix
½ teaspoon salt
1 cup milk
Pack chicken tenders
2 Tablespoons cooking oil
1 package frozen French fries
1 cup shredded cheddar cheese
Directions:
1. Place frozen French fries in oven according to package directions.
2. Combine cornbread mix, salad dressing mix and salt in a large plastic zip block bag; set aside.
3. Pour milk into a shallow bowl. Dip chicken into milk; place in cornbread mixture and shake to coat.
4. Heat oil in a large skillet over medium heat.
5. Add chicken, cook until golden on both sides, about 6 to 7 minutes per side or until juices run clear.
6. Five minutes before French fries are done, sprinkle with cheddar cheese. Continue baking until cheese is melted.

Home Made Peach Ice Cream
This is an all time favorite recipe in my family expecially on hot summer days!!!

4 eggs
2 cans eagle brand milk
1 T. Vanilla flavoring
2 C. real peaches chopped to size (I cut mine in quarter sizes)
1 1/2 qts milk
Ice cream salt
Ice
Mix all ingredients together. Put into electric ice cream maker. Mine usually takes about 30-45 mins to make.

1 C. sugar
1 C. Water
3 T. cornstarch
3T. strawberry Jello
2 C fresh strawberries
Combine sugar, water and corn starch. Cook until slightly thickened. Add Jello mix. Let cool. Add strawberries. pour into baked pie shell. Refrigerate. You can add strawberries on top and decorate with ready whip in a can as shown in picture!!!

2 eggs
1 stick margaine, room temp
1/8 tsp soda
3/4 C. buttermilk
1/2 C. pecans chopped or whole ( I use whole)
2 1/2 tsp cinnamon
Mix sugar and milk in large bowl. Add grated potatoes. Beat eggs and butter in seperate bowl. Add eggs and butter to sugar mixture. Then add rest of ingredients. Pour into casserole. You can top with small marshmellows and pecans. Bake at 450 degrees for 45 mins or until brown.

Mix Jello with 2 cups hot water and juice from pineapples. Add sour cream and beat with hand beater. When Jello begins to thicken add pineapple and nuts. Chill.

Rotini Hamburger Pasta Casserole
This is very good expecially if your a cheese lover!!!
Ingredients:
1 lb. Hamburger meat
1 box rotini noodles
1 can spaghetti sauce (I use Hunts 4 cheeses)
Cheese
Cook and drain hamburger meat. Cook noodles and drain. In seperate dish pour spaghetti sauce (I add ketchup, about a teaspoon of worcestershire sauce, oregano, salt and pepper to my sauce). Line up noodles in bottom of casserole dish, add cheese, layer of hamburger meat, then spaghetti sauce. Repeat layers til finished. Top casserole with extra cheese!!! Bake at 400 degrees for about 25 mins or until brown.

7 Layer Taco Dip
This is an all time favorite at my house!!

1- 16 oz can refried beans
1 package taco seasoning mix
2 cups shredded cheese
1-16 oz sour cream
1 larged tomato diced
1 can sliced black olives (optional)
1 bunch green onions chopped
1 jar salsa ( mild, hot depending on taste)
tortilla chips
In skillet, crumble sausage and cook until brown. Stir in beans, and taco seasoning. Spread sausage mix into serving dish. Top with sour cream then salsa. Sprinkle olives, tomato and onion on top. Cover with cheese. Serve with chips!!!

1/2 cup Kraft BBQ sauce (mild or spicy depending on your taste)
1 pk. fully cooked bacon
1 small tomato chopped
3 green onions sliced (optional)
CHEESE
Spread cream cheese on large platter. drizzle with bbq sauce. Top with all ingredients. Add more cheese to top. Serve with triscuit crackers, sociables, nachos, or chic in a bisc. This is a very easy and great snack!!!

1/2 lb. lean ground beef
1 onion
1 green bell pepper chopped
mushrooms
1 cup sliced pepperoni
16 oz pizza sauce
4 tablespoons milk
shredded cheese
Preheat oven to 350 degrees. Cook noodles according to directions. In pan, fry HB meat, onions, bell pepper, mushrooms. Drain fat. Stir in noodles, pepperoni, sauce, milk and cheese. Top with extra cheese. All extra ingredients are optional and you can also add your on favorites. This is just what my kids like. Bake inoven for 20-30 mins.

1 C. softened butter
1/2 C. sugar
2 C. all-purpose flour
4 Eggs
1 1/2 cups white sugar
1/4 cup all purpose flour
2 lemons juiced
Preheat oven to 350 degrees. In a med bowl blend softened butter, 2 cups flour, and 1/2 cups sugar. press into bottom of UNgreased pan. Bake for 15-20 mins until firm or brown.
In another bowl whisk together the remaining 1 1/2 cups sugar and 1/34 flour. Whisk in the eggs and lemon juice last. Pour over baked crust.
Bake an additional 20 mins in the oven. The bars will firm up as they cool. Cut into squares. Sprinkle powered sugar on top!!! YuMmY!!!!!!!
