Peanut Brittle

This is soooo good. I love peanut brittle and I found this is the easiest recipe to make it by:

Ingredients:

2 C. Raw Peanuts
1 C. sugar
2/3 C. Karo syrup
2 tsp. baking soda

Mix peanuts, sugar, and syrup together over med heat until peanuts pop and syrup is honey colored (about 20 mins). Take off stove and add soda. Stir fast and pour onto buttered cookie sheet. Let cook and break into pieces.


                            

SOUTHERN PECAN PIE

This is my all time favorite pie!!!

Ingredients:
1/2 C. butter
1/2 C sugar
3/4 C. white Karo syrup
2 T honey
3 eggs slightly beaten
1 tsp vanilla flavoring
2 cups pecasns (crushed or whole) I use whole one on mine

Cream butter until soft. Add sugar and stir. Then stir in syrup, honey, eggs, vanilla and 1 cup of nuts. Pour into pie shell. Put remaining cup of nuts on top. Bake at 350 degrees fro 40-45 mins or until brown.


                      

DUMP CAKE

This is very easy and quick desert to make!! I promise you it will not last long!!!

Ingredients:
1 Bx. Yellow cake mix
1 Lg. can crushed pineapple
1 Lg. can pie filling (any flavor) I always use cherry!!! Personal favorite
2 sticks margarine

Dump pineapple into greased baking pan and spread evenly. Pour pie filling over this. Sprinkle DRY cake mix over filling. Cover entire top with small slices of margarine. Bake at 375 degrees for 30-45 mins or until brown!!!


                           

SQUASH CASSEROLE

INGREDIENTS:
2 C. cooked squash
1 lg onion (optional)
1 C. shredded cheese
1 C. bread crumbs
1/2 C. Milk
pinch of garlic salt (optional)
salt and pepper to taste
2T. butter

Mix all ingredients and pour into greased casserole dish. Top with shredded cheese. Bake in oven for 30 mins at 350-275 degrees!!!


                                         

STUFFED GREEN PEPPERS

This is another good recipe that goes over good as an appetizer!!! This recipe is for 5 people

Ingredients:
5 med size green peppers
1 Lb. ground beef
balck pepper to taste
1 tsp. worcestershire sauce
1 med onion chopped (optional)
1/4 C. ketchup
shredded cheese

Brown beef and onions. Add salt and pepper to taste. Add worcestershire sauce and ketchup. As the meat is cooking cut a slice from the top of the pepper and remove the seed. Fill pepper with meat mixture. Place in a small casserole dish so they will all fit tightly together and not turn over. Sprinkle shredded cheese on top of each pepper. Bake at 375 degrees for 30-45 mins or until brown.



                     

Cooking Tips

Here is a few little tips I hope you can use:

* To slice meat into thin strips, partially freeze it. This will help the meat slice more easily
* Never cook a cold roast. Let it stand for at least an hour at room temp. Brush with cooking oil before r
   roasting.
* To keep cauliflower white while cooking add a little milk to the water.
* When boiling corn, add sugar to the water instead of salt. Salt will toughen the corn.
* To keep celery crisp, stand it upright in a pitcher of cold, salted water and refrigerate.
* A few drops of lemon juice in the water will whiten boiled potatoes.


                                      

Chocolate Banana Melt

This is another very fun and unsual snack for the kiddos!!! This is a treat my kids love, expecially when they have over their friends!!! Hope you enjoy!!!

Ingredients:
1 banana
1 bag small colored or white marshmellows
1 bag chocolate chip morsels

Slit banana long way down the middle. Add chocolate morsels and marshmellows. You can either wrap this in tin foil and place on the grill for 2-3 mins or place in the oven!!! YUMMY!!!!!!!!!!!!!



                                   

Banana Strawberry Smoothie

This recipe is perfect for the kiddos on a hot summer day!!! Its also very nutritional for them!!! They will love it and love you for making it for them!!!

A frozen banana is the backbone of a good smoothie. Never toss out over-ripe bananas -- just peel them and store them in a bag in the freezer.

Ingredients:
1 frozen banana
1 container strawberry, banana yogurt
1/2 C. fresh orange juice
1/4 C. blueberries washed.
4-5 strawberries

Combine all ingredients and blend well together!!! You can serve up some chilled fun!!!!



                             
                  

HOMEMADE BARBECUE SAUCE

Ingredients:
1 C. Ketchup
2 T. Mustard
2/3 C. sugar
1 C. Water
1 Lemon. cut in 1/2 squeeze juice in sauce
1 onion (optional)


Mix together in order as listed in saucepan. Bring to a boil then simmer  for 30 to 40 mins. Add salt and pepper to taste. If you want it spicy you can add tobasco sauce to taste. Use this for pork chops or Chicken!!! Yummy!!!!!


                                             

Pork Chop Casserole

Ingredients: This is a recipe for 6 people
6 pork chops
1 can cream chicken soup
1 container sour cream
2 to 3 lbs. potatoes
salt and pepper to taste

 Brown pork chops on both sides. Mix together soup, sour cream and salt and pepper. Slice raw ptoatoes into casserole dish. Pour soup and sour cream mixture over the potatoes. Lay pork chops over potatoes. You can top with shredded cheese. Cover with foil and bake 30 mins on 400 degrees. Uncover and bake an additional 20 mins.


                                               

Dressing

Ingredients:
3C. Cornbread crumbled
2C. dry biscuit crumbs
4C. chicken broth (Swanson is the best with most flavor)
3 eggs
1/2 C. Chopped onions (optional)
salt and pepper to taste

Mix all ingredients well. Add more broth if necessary. You can add celery or sage to taste if you like. Bake at 450 degrees for about 30-45 mins.

Mexican Cornbread

INGREDIENTS:
1 C. self-rising cornmeal
1 T. sugar
1 sm. can cream corn
1 sm. onion
1 egg
1/2 c. grated cheese
pinch of salt
1/2 cup wesson oil
1/2 C. sweet milk

Grease pan. Sprinkle with cornmeal. Mix all other ingredients together. Bake in oven at 450 degrees for about 30 mins.

SAUSAGE BALLS

                                                                    SAUSAGE BALLS

These sausage balls are a great hit at any finger food party!!! Very easy and quick to make.

INGREDIENTS:
4 C. Bisquick mix
1 lb sausage (mild or Hot)
shredded cheese

Mix all ingredients together. Shape into small balls. Bake at 350 degrees for about 20 mins or until brown.

                                             

PEANUT BUTTER BALLS

This is a very easy and quick sugar fix for everyone!!! These are very good for house parties, finger foods, or a snack for the kids!!!

INGREDIENTS:
1 1/4 graham cracker crumbs
1 C. powder sugar
1/4 cC. soft margine
1 C. peanut butter, crunchy

Mix all ingredients in bowl. Roll into balls and then powder sugar. If you prefer to dip in choc, you will need to get the choc bars and melt in microwave. When the Choc is melted, dip the peanut butter balls into choc and place on wax paper until cooled.

HAYSTACKS

                                                                            HAYSTACKS

This has always been a favorite with the kiddos!!!!

INGREDIENTS:
2 T. peanut butter
6 oz butterscotch morsels
1 1/2 canned chinese noodles
1 C. plain peanuts (optional)

Melt peanut butter and butterscotch morsels over low heat in med saucepan. Stir in chinese noodles and peanuts. Scoop out teaspoons of haystacks and place on cookie sheet covered in wax paper. Cool.



                                                

Cucumber Spread

                                                               CUCUMBER SPREAD

This has always been a great appetizer favorite of mine!! This is perfect for a baby shower, bridal shower, church gathering, or a party!!

INGREDIENTS:
1-8oz pk cream cheese
1 tsp. vinegar
1 large grated cucumber
1 sm onion grated fine (optional)
mayo, salt and pepper to taste
box of crackers (Ritz, sociables or Chic in a biscuit)

Mix all ingredients together and place on crackers. YUMMY!!!!



                                         

Chocolate Oatmeal Cookies

                                               CHOCOLATE OATMEAL COOKIES

 This is always a fun recipe the kids love to help with and the cookies are YuMmY!!!!

INGREDIENTS:
2 c. Sugar
1/2 c Milk
3 T Cocoa
2 C. instant oatmeal
1 Tsp. Vanilla flavoring
1/4 cup peanut butter

In medium pot on med to high, bring sugar, milk and cocoa to boil. Let it boil for 2 mins. Remove from stove and all oatmeal, vanilla, and peanut butter. Spoon onto wax paper and let cool.



                                  

Easy Peach Cobbler

This has always been one of my favorites since most of the ingredients are found everyday in my cabinet. This is perfect for that  unexpected company that shows up.

INGREDIENTS:
1 c. flour
1 cup sugar
1 cup milk
3/4 stick butter melted
1 large can peaches

Mix together flour and sugar in casserole dish. Add the milk and melted butter. Add peaches and then the juice. DO NOT stir. Blake in oven at 350-375 degrees for 45 mins or until brown.


                                  

LEMON PIE

This has always for me been a great crowd pleaser!! It is tangy and tarty!!!! This leaves your mouth full of zest!!!

INGREDIENTS:
1 can condensed milk
1 sm can frozen lemonade
1 T. lemon juice
1 sm cool whip
1 ready pie shell
1 lemon

Mix all ingredients together except the lemon and pour in pie shell. You can take shavings from the lemon peel and place on top of the cake for decoration as shown in the pic. Hope you enjoy!!!!

                                   

Veg All Casserole

INGREDIENTS:
1-16 oz can Veg-all, drained
1 c. chredded cheese
1 c. mayo
1 can sliced water chestnuts
pk crumbled ritz crackers

Mix all ingredients except crackers together in a cassserole dish. Crumble ritz crackers on top. Lay several small thin slices of butter on top. Bake in oven at 350 degrees for 40 mins or until bubbly.

a pinch: 1/8 teaspoon or less
3 teaspoons: 1 Tablespoon ( alot of people mistake 2 teaspoons)
8 tablespoons: 1/2 cup
12 tablespoons: 3/4 cup
16 tablespoons: 1 cup
2 cups: 1 pint
4 cups: 1 quart
8 quarts: 1 gallon
16 ozs:  pound
32 oz: 1 quart



TATER-TOT CASSEROLE

This is another favorite in my family!! The kids love it!!

INGREDIENTS:
 1 lb. Hamburger meat
 1 can cream mushroom soup
 1 can water
 1 bag tater-tots
 1 cup grated cheese

Brown hamburger meat and drain fat. In sauce pan, heat soup and water to a boil. Spread meat and soup into casserole dish. Place tater-tots on top of meat and cheese. Bake at 350 degrees for 40-45 mins or until tater-tots are brown.


                     

Green Bean Casserole

This is another very easy dish that goes over great at family reunions. This recipe will feed 4-5 people with 2 servings each.

INGREDIENTS:
 2 can Green beans
 1 can cream mushroom soup
1 can evaporated milk
1 small onion (optional)
salt and pepper to taste
cheese to taste
ritz crackers
Frenchs onions (optional)

Mix green beans, soup,  milk, onion, salt and pepper. Put in dish and add cheese and crumbled crackers on top. Bake at 375 degrees for 20-30 mins.

BROCCOLI CASSEROLE

This is another great dish for a family dinner!!!

INGREDIENTS:
8oz shredded cheese
1 can cream mushroom soup
1 egg
1 bag broccoli flowerets
3 lg T. Mayonnaise
1 can sliced water chestnuts
salt and pepper to taste

Mix all ingredients together. Put in a casserole dish to size. Mix 1 stick of melted butter with 1 1/2 rolls of crushed ritz crackers. Spread over casserole. Bake at 375 degrees for 25-30 mins until bubbly.



BAKED BEAN CASSEROLE

This is another great and easy casserole dish for those busy days, or a great dish for a family get together.

INGREDIENTS:
 1 lb ground beef
 1 Lg can baked beans
 1/4 cup brown sugar
 2 cups ketchup
2 tbs. mustard
2 caps worcestershire sauce
1 med onion chopped (optional)
2 T. butter
salt and pepper to taste

Brown meat and onion in butter. Drain fat. place in casserole dish. Add remaining ingredients and stir well. You can add weines cut up or strips on bacon on top. Cook in oven on 400 degrees for 30-45 mins.

RANCH POTATOES

                                                               RANCH POTATOES
                        This would make a great appetizer to any meal or a great afternoon snack.

INGREDIENTS:
4 med potatoes
12 oz bacon
shredded cheese (amonut to your liking)
bottle of Ranch dressing

Cut potatoes into slices. Boil potatoes until done. Dont overcook (to soft). Fry or microwave bacon. crumble bacon when cool. In casserole dish, layer potatoes, cheese and bacon. Drizzle with ranch dressing. Repeat layering until ingredients are used up. Bake at 350-375 degrees for 30 mins or until done.

Busy Day Chicken Casserole

                                               CHICKEN AND RICE EASY CASSEROLE

This is a great dish for a busy day!!!! It has your meat and veggies too!!! Hope you enjoy!!

INGREDIENTS:
 Raw, bonless, skinless chicken breast (number depends on how many in your family)
1 can cream of chicken soup
1 can cream of mushroom soup
2 bags instant boil in bag rice
1 to 1 1/2 cups water (depends on how you like the consitency)
2 table spoons mayo (optional)
Ritz crackers for topping

Place raw chicken in casserole dish. Mix 2 soups, water, mayo if choose to, and uncooked rice together. All salt to taste. Pour mixture over chicken and top with crumbled ritzs crackers. You can spray butter over top if choose. Cover with foil. Place in oven for about 45 mins on 400 degrees!!!

HAMBURGER DIP

         This recipe is great for football parties, finger food parties, or any type of get together!!

INGREDIENTS:
1 Lb. Velvetta Cheese (hot, mild, or plain to taste)
1 Lb. Ground Beef
1 Med Onion (optional) Chopped
1 bell pepper Chopped
salt to taste

Combine ground beef, onion and bell pepper. Cook until brown and drain off fat. Put hamburger mixture and cheese into crock pot. Cook on low for approximately 1 hour or until blended. Serve with nachos!!! This will be the star of the party!!!!


Baked Mac and Cheese


                                                         BAKED MAC AND CHEESE

                 INGREDIENTS:

                1-16 oz box rigatoni noodles
                1- sm can evaporated milk
                1- egg
                1/2 cup melted butter
                1 1/2 cup milk
               3-4 cups shreded cheese
               salt and pepper to taste

               Cook noodles and drain. Mix noodles and all other ingredients together. Top with extra   cheese. Bake in oven 40-45 mins on 375 degrees!! This is a very easy and non time consuming dish and it goes great for those holiday get togethers!!! Total time: 1 hr



Kool-Aid Pie

My first fun recipe is Kool-Aid Pie!!! This is so much fun for the kids to make!! It is also a kid pleaser for any family get together!!!







 INGREDIENTS:
1- Ready make graham cracker pie crust
1- 14 oz can condensed milk
1- pk any flavor kool-aid
1- small cool whip


Mix all ingredients together and pour into pie shell. You can decorate with your favorite fruits  or serve plain!!! Either way it will be a crowd pleaser!!! Fridge about 1 hr then serve up some fun!!!!!
